What to look for
Bulbs should be firm, clean and white and well cured with the neck and outer skin completely dried. The outer skins should remain intact and not flake off when rubbed.

Due to its high solids content, garlic freezes at temperatures below -1°C. Good airflow, dry conditions and optimal temperatures will keep garlic for 9 months. However, bulbs will last for 1-2 months even at 20-30 degrees. Maintaining a dry storage space is the key component for keeping garlic.
