What to Look For
Quality is primarily based on uniform egg to globular shape, firmness, deep purple skin and a healthy green calyx. Overly firm and glossy eggplants are signs of pre-maturity, whereas an over-mature eggplant will turn pithy and bitter.

Eggplant fruit are chilling sensitive at temperatures below 10°C. At 5°C chilling injury will occur in 6-8 days causing pithinh, surface bronzing and browning of the seeds and pulp tissue.
Response to Ethylene
Eggplant is moderately affected to ethylene. Calyx abscission and increased deterioration, particularly browning, occurs when exposed to the gas.
