What to Look For
Choose bell peppers that are firm with uniform size, shape and colour. Avoid growth cracks, decay or sunburn.

Pepper firmness is directly related to water loss. Peppers stored above 7.5°C will be more susceptible to water loss and star to shrivel. Peppers can keep for 2-3 weeks under optimum conditions. Ripe and coloured peppers are less sensitive to chilling injury compared to green peppers.
Bell peppers do not respond much at all to ethylene exposure.
